Back to life, back to reality….

Sad panda!! We had a blast, it was GREAT being off the grid for a few days. I missed my munchkin like crazy, but it was definitely worth it to remind me that I’m more than just a mom 🙂 The beach was great, I didn’t get too sunburned, and now I’ve got a great head start on my summer tan lol.

Hubs and I did decently well sticking to low carb eating, but I was highly disappointed with the lack of variety in our food options. Suffice it to say my vegetables every day were a salad and green beans. The worst part was the drive there and back (an 18 hour drive, excluding stops) because the couple we went with were…not insensitive to our dietary preferences, per se…but they def didn’t make it easy on us. The trip down, I packed us a healthy lunch, and had breakfast for dinner that night once we stopped, but on the way back we didn’t have the luxury of packing snacks or anything. So we ate lots of bunless cheeseburgers…and splurged on a thin crust pizza for dinner. I didn’t even enjoy it!! 😥

We splurged a bit on the boat as well…got pretty drunk one night and ordered room service, and decided to give no fucks since we had tried really hard to behave up to that point. It was, again…slightly disappointing. The pizza (again with the pizza lol) was gross and under cooked, and the cheesecake was cloyingly sweet. *sigh*

I haven’t been brave enough to get on the scale yet, I’m saving that for tomorrow on my normal weigh in day. I’m positive I’ll be up, just not sure how far. Hubby kept his gain to only 3 pounds, super proud of him!! As much swimming and walking as we did, you’d think we would have been ok but oh well. Fingers crossed for me being less than five pounds up lol.

I have been seriously slacking on my water lately. I drank a decent amount on the trip, but it definitely was not what I drank the most of. So that’s my goal for this week. Dump all the other drinks except my morning coffee and really push the water. After this weekend, hubby and I are going to redo the guns, buns, and abs challenge. I don’t want to be super sore for the holiday weekend lol, that’s the only reason we’re waiting.

Anyway, enough of my rambling. I’ll be back to my normal, boring old self after today lol. I’ll have to post a couple pics after I get them uploaded and edited though. I have one of the Miami skyline that I am in love with!

Also, I’m going to attempt low carb cupcakes this week…wish me luck!

The Struggle is Real!

I made an order of 50 cupcakes today….a mix of chocolate and vanilla cupcakes, some with chocolate frosting, some with vanilla, and all filled with oreo creme. Let me just say, it was WAY hard to not want to eat one! But I did try a sample of each of the frostings (to check for sweetness and consistency) and they both tasted so sickeningly sweet!! Makes me both happy and sad lol. I don’t really miss those sweet treats unless they’re right in front of my face, but dang do I miss cupcakes sometimes!

I was so busy with that and all our travel preparations today that I didn’t realize until about an hour ago that I’d only had a cup of coffee and a piece of cheese all day….oops! No wonder my head feels like it’s going to split in half. It was so hot though, that I did drink a gallon of water lol. So that’s a perk.

No exercise, other than cleaning, obviously. Poor kiddo just wanted to go out and play all day and I couldn’t take her out; I felt terrible. Especially knowing we will be leaving her soon. 😦 But her pawpaw and mimi will be here for the day tomorrow so I’m sure she’ll get in lots of play time!

Nothing else new or exciting to report. Our departure day is imminent and I feel like my to-do list is longer than ever! EEEKS!

Oh wait…we have been low carbing for one month today! YAY, go us lol. I don’t think we’ll be quitting any time soon, either. Both hubby and I are really enjoying it.

How is it possible…

that my to-do list keeps getting longer every day?? Crap!! I’m never going to get everything done in time before we leave. Seriously…Balls.

Being so busy makes me miss convenience meals: frozen pizza, tv dinners, etc. The lean cuisines were my go to lunch before going low carb, and frozen pizza (or a take and bake) was our go-to on busy nights. There just aren’t any equivalent low carb options. I don’t really have the option of not cooking if I want a healthy, low carb meal. That’s my biggest peeve with HFLC.

I just realized tomorrow is the one month mark! Holy cow!! I feel much better after this month than I did with the 6 weeks of calorie counting. In general, I don’t feel deprived, and I’m still not really craving any carbs (other than the aforementioned “conveniences”) except maybe a milkshake today, but that’s only because it was hotter than Hades lol. I think spring has passed us by and we’re going straight into Summer!

I need to focus on getting my water intake back up. I have been majorly slacking, and I can tell bc my skin has dried back out 😦 and spending so much time in the sun means I’ll need every bit of water I can get. So once we’re back from vacay, I’m going to do another 30 day gallon challenge, and repeat the Guns, Buns, and Abs challenge as well. Everyone, hold me to it!! LOL!

So that’s about it for the last couple of days, running around like a chicken with my head cut off. Not fun! But it’ll be worth it come Monday afternoon 🙂
